What I Ate Wednesday: Honolulu

Finally, a real, full day for WIAW! Here’s what I ate last Wednesday, a day off from work (finally!) and teaching.

Breakfast: smoothie, per usual. This was tart cherry juice, coconut water, frozen spinach and peaches, and PINES organic superfood blend (wheatgrass, alfalfa, hemp protein and stevia).

I took an hour and a half power vinyasa class at my favorite yoga studio here, Power Yoga Hawaii.

Lunch: When I got home, I was famished! I found hot dog buns in the freezer, so I toasted one up and made egg salad (two hard-boiled eggs, capers, spicy brown mustard, veganaise). Kiyo made pickled daikon a few weeks ago with daikon from our Ma’o Organic Farms CSA box, so I put that on the open-faced sandwich as well.

After lunch, I spent a couple hours catching up on emails and finishing my book (The Power of Now by Eckhart Tolle). It is finally cool here in Hawaii, enough that I put on cozy leggings and a long-sleeved shirt after I showered. I needed to study for the GRE (ugh!) so I opened up my vocabulary app and took a rejuvenating viparita karani, “feet up the wall” pose. It felt good! Of course Kiyo came home in the middle of this… he thinks I’m weird.

Snack: I found these seasonal chips in Whole Foods and decided to try them; they’re pretty good! I think that flax, quinoa, corn, pumpkin and cranberries are a great combination. The flavors are all there but they’re not too intense, and the chips aren’t too thick, like you might expect.

Kiyo and I ate a couple dipped in kalamata olive tapenade, which might sound weird but was actually so good.

Dinner: Kiyo helped me study math for the GRE (ugh again!). We were running a bit low on fresh food, because we’ve been waiting for our next CSA box. So, we heated up a bottle of lentil soup we had in the cupboard. It was actually pretty good, with garlic, onions and a few other veggies.

Ghirardelli Christmas brownies

Dessert: After all the GRE studying, I decided to treat myself to some dessert. I mixed up a bag of Ghirardelli triple chocolate brownies and when they were done, decorated them with some red glitter frosting I found in the cabinet (I know it sounds weird that we’re “finding” things in our own cabinets, but it’s all stuff my mom left that we didn’t know we had!).

Kiyo and I enjoyed our brownies with some soy milk eggnog (neither of us likes regular eggnog but for some reason we both like this soy version) and episodes of New Girl.
